Congrats on finishing your AA. IT is a great field to be in, you can always pick up an MBA down the road when you have some business experience.
I wouldn’t recommend UOP for the degree, even tho it is regionally accredited and will allow you to be licensed. A Memphis IT degree is best case. Online degrees are great for people who don’t have access to local school, the military, or working parents, but if you have access to Memphis, definitely go there.
If you are going on line, DeVry is the best option.
To correct Kalos, you do NOT want to go to Grantham, it is only nationally accredited, and not a good one at that.
Regardless of delivery method (on ground, online, hybrid), a higher ed institution in the US can have 3 institutional accreditation statuses.
1. Regionally accredited – the highest and most useful.
2. Nationally accredited – real, but not as recognized or useful. Yes it is less than regional accreditation, which isn’t intuitive.
3. Unaccredited

Whatever you do, get away from University of Phoenix. You need a degree from a REAL university if you want prospective employees to respect your education.
Journalism and journalism investigation/reporting.
You made a BIG mistake enrolling in University of Phoenix. You might recover by enrolling in a real university. Maybe your Phoenix credits can be transferred – but maybe not.
IT can’t be learned on-line and employers just laugh at an online IT "degree". You need hands-on classes and labs. Grantham "University" offers a semi-credible BSET in Computer Engineering Technology and Electronics Engineering Technology that can be oriented to IT, but even Grantham requires you to have access to real labs or employer IT equipment.
DeVry is another possibility if you want an accredited BSEET. Many DeVry degrees are substandard, but their BSEET, BS-CIS, and BSTM degrees are tolerably good.
